I am a Victorian Soul, who lives in a small townhouse that was built in the mid 1970's, not a huge Mega Mansion!! I just recently lost my Hubby Joe, who was a Retired Letter Carrier. I worked night shift as an RN on a Hospital based Rehabilitation( Physical Medicine) Unit for 37 years before I had Knee Replacement Surgery and officially Retired in 2019 after 41 years working in Direct Patient Care ... I am so glad that we retired at 62 years of age and got to spend that time together before he passed....I still do love Retirement!!!!

Checking Off a Few Goals for January

Blogging has always been a stress reliever for me along with an avenue to share my passions which are my home and my garden.....
 
 I feel it is a personal Journal that, hopefully, someday, my Twin Granddaughters will be able to look back on to learn about who I was....
 
I will be posting 3 times a week on MONDAYS, THURSDAYS and SATURDAYS....

In my recent post, Quarterly Goals and Possibilities List. I listed my Goals, more of a To Do List, for January of this year ...

I am happy to say that I already accomplished some of those so I thought I would give you an Update ....

 I mentioned that I wanted to try some new recipes.....

And I did just that on Sunday....

Joe was the one that did not like casseroles....

Now I can try out a few that I would have never tried to make before...

I found a few recipes on Pinterest for a Pizza casserole...

 
I knew my son Joey would like this so I sort of combined a few recipes that I found on Pinterest and came up with this....

One box of pasta....I used rotelli
1 pound of hamburg
1 jar of marinara sauce
1 pkg. of shredded mozzarella cheese
Crumbled bacon...I used some from a package I got at Sam's Club
Turkey pepperoni 
Parmesan cheese
2 Tbsp. of milk
Seasonings...Italian Seasoning, onion and garlic salt, pepper, a dash of sugar

 
Brown the hamburg in a skillet, drain, return to the skillet, season with all the Seasonings, add bacon and sauce and simmer
Cook Pasta as directed, drain, put back in pot and mix in 2 Tbsp. of milk
Layer in a baking dish...
Sauce, pasta, mozzarella cheese,pepperoni and repeat with pasta, cheese, sauce and top with pepperoni and sprinkle Parmesan cheese and more crumbled bacon on top...
Cover and bake for 30 minutes on 350 degrees...

After you drain the hamburg, you can then fry some onions and garlic up to add to the sauce mixture but since Joey does not like these, I just used the seasonings...

We did enjoy it with Joey taking a container home for a few evening snacks...

And I have enough for another meal for myself when I make Joey steak which I prefer not to eat...

I do have another casserole planned for later in the week...

 Another Goal....

 Go through and reorganize all the cupboards and drawers in the Kitchen.....FINISHED


 


 

 

 

 This bread drawer is what actually inspired me to do this again as I have gone through all my cupboards now 3 times since I retired 5 years ago...


 As I seldom have bread in the house and was annoyed that every time I tried to remove wax paper or tin foil, they all would fall out of the cupboard that I had them in for 45 years!!

 I guess after 45 years of that fiasco, I decided to see if they would fit in this bread drawer and Lo and Behold, they did!!


No more falling out of the cupboard every time I wanted to pull one out!!

 And this is how I rearranged the cupboard where I used to keep all of those....

 

 Donate what I do not need or use...... I WILL BE TAKING UNWANTED ITEMS TO SALVATION ARMY

 

 Another Goal

Reorganizing all of my spices led me to add another Goal to my January List ....

Reorganize the Pantry Closet for the Winter....FINISHED

 
 I have been buying in bulk on sale, stockpiling as much as I can not only as part of my Winter Financial Plan but also in preparation for the next 4 years as ALL prices on EVERYTHING including groceries will be soaring in response to the proposed tariffs that will be enacted after January 20th....
 
  I am sure we will see a repeat of lack of goods and supplies like we did in 2020....
 
 I have also seen several other people on social media posting that they are doing the same....

And do not fret.....All expiration dates are well into the future so these will be used before that...
 
  I store the canning jars I use for my Turkey Bone Broth soup on the very top shelf.....

Baking supplies and extra Seasonings are on he next shelf
 
 
 
 Followed with soups and sauces on the next shelf
 
 Rice and Rice a Roni mixes, Shake N Bake and soup noodles
 

More Shake N Bake and Stove Top Stuffing,  canned vegetables, canned chicken and tuna and gravies
 
 Pastas, Mac n Cheese, Hamburger Helper and pasta mixes


Condiments, Minute Rice, overflow of sauces, white rice, bread crumbs and granola bars

 Coffee, Tea, Hot Cocoa mixes, Splenda and marshmallows
 
 
 
Soda for company, as I do not drink it, and cereals

Anything I buy that I can not fit in this closet will be stored down in my storage shed....


Another Goal

Work on my Christmas Planner for next Holiday Season.......STARTED BY WRITING DOWN MENU'S, HOW MUCH I PAID FOR MEALS and SHOPPING LISTS FOR FOOD AND GIFT LISTS FOR NEXT YEAR

 I HOPE to do a Rudolph Day post for January on this over on my Christmas Blog, A Debbie-Dabble Chrsismas, on the 25th..

Get back on my Wellness Program, using Intermittent Fasting......STARTED BACK ON IT ALONG WITH EXERCISES USING WEIGHTS

 

Another Goal

Drink at least 64 oz. of water a day....... I HAVE BEEN DOING SO USING THIS DOLLAR TREE PLUS TUMBLER WHICH HOLDS 32 OZ.

I make sure I drink 2 of these a day making it easy to keep track of my water consumption

In the Fall, I bought a Brita Water Filter Pitcher from Target, using a gift card that I had...

This saves me money as I no longer buy cases of water and helped to reduce the amount of plastic going to landfills....

It also saves Joey's back as he no longer has to carry those cases of water up my 13 steps from our parking lot...


Another Goal

FINALLY use my new Camera...DONE

I ordered this back in November online from Walmart....
 
I also purchased the 3 year protection plan...

I stayed with a Kodak camera as I have only had Kodak cameras for many many years....

I actually have a similar one, not as advanced as this one, as this one is the new model, more advanced....

Why I wanted another camera is because the one I have uses alkaline AA batteries which is a pain in the you know what because as the batteries start to run low, the quality of the pictures also suffers....

And since I take a lot of pictures for FB and my blog, I am constantly changing those batteries...

The new one uses a rechargable battery that I can easily recharge when I am downloading pictures to the computer for editing...

Set up was easy as I have done it in the past but I do still have to spend time and read the online manual so I am familiar with it's many features....

So there is my Update on my Goals for January...


And yesterday, I finally got my decorating Mo Jo back...

After Christmas, I must admit, I was in a bit of a slump....

But that is now over and I started on another Goal for January which is packing up most of Christmas in the Den and changing it over to Winter decor...

I am happy to say that I have about half the Den done but still need to change over the Trees and a few other things...

So in my next post on THURSDAY, I hope to be sharing some of my Winter decor in the Den....

  1. I shop sale items too, it is the only way to shop as far as I'm concerned. Grocery prices are terrible here, and now fewer stores do price matching (used to be so many of them did, but not any more) One big retailer that stopped is Walmart, not that I shop there a lot, and I find their prices have also gone up a lot. I keep all my foil, wraps etc in a drawer, so much easier to get to. Love casseroles, and there is usually enough for a second meal. My kind of cooking.

  5. Very good on starting the goal items. I've been working on my kitchen cupboards too. It's always both a tough (and humiliating!) job! I have a little chest with drawers for my kitchen wraps, too.

  8. Debbie, I love how much you've reorganized your kitchen! I need to do our pantry again, too. Charles went nuts getting canned goods in the fall and they are overflowing. He needs to eat all the chili, lol! ;) I've been thinking I need to pull everything out of each cabinet and wipe down the insides - lots of dust after 6 years. :( Charles has been wonderful as he has reglued/stapled a couple of pieces of trim onto our kitchen island that have needed it since we moved in in 2019. Looks like he should have a new job soon, but it sure has been nice having him home to really work on fixing things in the afternoons after a morning online applying for positions.

    Hope all is well and I do have one of your recent posts linked for this week's SYS (#448); it just hasn't uploaded yet (when I get home today). The pizza casserole looks yummy, too. :)'

  11. Woohoo! Well done on the organizing and figuring out new ways to make your life easier in the kitchen! Love your new tumbler. I probably should look at my goals and see if I have gotten anything accomplished. We did have a game night the other day and I told my husband when we are going on a date this month. So I guess that is good. No arm workout yet, shame on me!

  12. You are a rock star. Look at you earning those coveted checkmarks on your list of goals. And that recipe looks like something my husband would DEVOUR. I have the turkey pepperoni, and of course, hamburger. Need to get some grated cheese or cheese to grate. Will be whipping that up.

    Your pantry is sparkling!! So much easier to see what you have when things are where they should be. I need to go back through my pantry again this week, just real quick as we have been using up canned goods and I need to inventory what's left.
