2 Zucchini Recipes

I am so happy you decided to stop by!!

We are in for some great weather here in the upcoming days!!!
High temps. in the mid 70's with lows in the 50's.......

It doesn't get much better than that in my book!!!

Today, I am going to share 2 Zucchini recipes that I recently tried out!!

An Amish Farmer sets up shop at the local Mini Mart down the road from us every Friday.....

He sells all kinds of Vegetables , Fruits, Baked Goods, and Jams and Jellies

He does a heck of a business since it is located right by a Veteran's Administration Hospital, a Nursing Home and the largest shopping District in our County!!!

A few weeks ago, Joe picked up some veggies for our niece Renae......

Each of these were only $10 a box!!!!!
Renae was kind enough to give us 2 jars of tomatoes that she canned......
Joe is thrilled because he uses these to make his Chili ( Sloppy Joe's)

And she also gifted us a jar of Bread and Butter Pickles which I have not had since my Mother used to make them MANY years ago!!
They are delicious and brought back a lot of memories!!
I don't Can, can you tell??????

But I am so glad that Renae does!!!

I have been buying zucchini from the Amish Farmer because now that I am retired and I have time to "play", I decided to make some Zucchini Bread.....

I used to make it long time ago and I used the recipe that my Mother used which was in this book......
This is a recipe book that a local AM radio station, W A R M , compiled from recipes sent in by Listeners about 40 years ago!!!!

Everyone listened to Warm Radio back then and we all lived in "Warmland"!!!
You can see that someone typed up all the recipes that were chosen for the book and then they simply ran them off......
Definitely before the days of computers and printers!!!!

This is the second cook book that the Radio Station out out......
 My Mother has marked 1985 No. 2 in the upper right corner....

You can see it looks a bit more professional than the first book....

I got the recipes for the Ricotta Cheese Cookies and the Potato Chip Cookies that I make for Christmas out of these books....

Back to the Zucchini.......

I had 2 nice sized Zucchini's from the Amish Farmer.....

One zucchini grated will yield enough for this recipe which calls for 2 cups of zucchini....

Now I do not have a fancy Food Processor because I really do not call myself much of a cook but i do have this handy dandy little chopper!!!!
I have had this Hamilton Beach Emmie for about 40 years because I think my parents bought it for me the 2nd Christmas that I was married!!!
And it still works wonderfully......

Now I peel the zucchini because my Mother always did....

I know some people do not....

Let me tell you about my mixer.....
 This Sunbeam mixer is pretty much identical to the Kitchen Aid one that originally sold for $399, then came down to $299 and now you can find it on sale for $199.

It is identical in watts, speeds, size of the Bowl, accessories, etc.

I bought it about 4 years ago when the other brand was going for $299!!!!

I found it online at Walmart for $99!!!!

It came in different colors but because this orange was not such a hot color back then, this one was marked down to $79!!!!

SOLD!!

And I even got FREE shipping!!

 I LOVE it!!

I have no idea if they still make it but it was one of the best buys that I ever got compared to the price of the other one!!


Zucchini Bread Recipe

3 Eggs
2 cups Sugar
1 cup Oil
2 cups Flour
2 tsp. Cinnamon
2tsp. Baking Soda
1/4 tsp. Baking Powder
1/4 tsp. Nutmeg
1 tsp. Salt
1 tsp. Vanilla
2 cups grated zucchini
Optional: 1 cups chopped nuts
Beat eggs and sugar together

Then add in oil

Mix Flour and all other dry ingredients together

Fold in grated zucchini and vanilla

Add nuts if desired

I don't add the nuts in because I have been giving a loaf to our Niece Renae and our Great Niece Cortney is allergic to nuts....

Grease and flour 2 loaf pans
Pour mixture into the 2 greased and floured loaf pans ( I use tin foil disposable ones)
Bake on center rack at 350 degrees for an hour and 15 minutes.....

Test with tooth pick to be sure they are done
 No batter on the toothpicks!!
Remove them from the oven and place on a rack to cool.....
 It makes it easy to loosen the loaves from the tin foil pans by simply pulling the sides outward....
 Tap the bottom of the pan and the bread will pop right out.....
 I am cutting these in half because I will keep out one half to eat and the other 3 halves, I will freeze because I am planning on using them when company comes for Christmas!!!
 Do you know how good Zucchini Bread tastes with ice cream???????
 Yummy!!!
The other dish that I made with Zucchini is a recipe I found online......


Zucchini Zots!!!

These are supposed to be like Tater Tots.....

Clever play on words there....

Again, you need one good size zucchini to give you 2 cups of grated zucchini that the recipe calls for....

Zucchini Zots Recipe

2 cups grated Zucchini
1/4 cup Parmesan Cheese
1/2 cup Mozzarella Cheese
1/2 cup Italian Bread Crumbs
3 Eggs

Mix all ingredients together in a bowl

Season with Italian Seasoning, Onion and Garlic Salt, Parsley and Pepper

Mix again

Pour mixture into 2 muffin pans, filling each section half full and pressing mixture down

Top with Mozzarella Cheese
Bake on center rack at 400 degrees for 20 - 25 minutes

Tops will be gold brown
Makes 12 Zucchini Zots

Can be dipped in Ketchup if desired...

They were not too bad at all!!!

Did I mention that Joe will not eat any of this????

He is a picky Bugger!!

My Dad always would slice zucchini, dip it in Italian breads crumbs mixed with some Parmesan Cheese and fry it lightly....

When I was pregnant with our oldest son, that was all I ate that Summer!!

Fried Zucchini was my craving!!

I think I will make some of that when Joe gets more zucchini on Friday from that Amish Farmer!!!

  5. Both soound delicious...a must try to add to my freezer. I don't can...but I sure use my freezer for a lot of things. Your baked goods look amazing...and I'd love to have a piece of that cake with this 2nd cup of coffee this morning.
    Our temps are still in the 90's...today should get to 91. Too hot to think of decorating for fall but I've put a few things out...I don't do much decorating for any holiday other than Christmas.

Just finished mowing and wanted to cool off before getting in the shower, so thought I'd pop back for a visit. Used to can, but haven't done that in years. I see we have some things in common...we like some of the same movies, and both used to be in the medical field. I have a travel blog also and a charity blog.

  7. Ooo! it all looks yummy. I love Zucchini Bread. The recipe you use is very similar to mine. I use to do home canning. Every fruit and veggie I could get. It was great having all the delicious preserved food. But, I don't do it anymore. I lost my desire to do all the work involved in canning. It has been so hot this summer I have not done any baking and very little cooking. Have a wonderful day. Enjoy the fruits of your labors.

  8. Zucchini bread tastes more like a cake to me, so it would be good with ice cream. I like canning and it's music to my ears when the jar lids pop.
    Zots are new to me but would try them. I like your food processor. Easier to store with mixing bowl on top of motor. Mine was longer and took up more room.

  10. Y U M ! I still love the old cookbooks. These are quite nice. I have one a friend I worked with in the medical school at UCHSC years ago. She compiled recipes from celebrities back than. I still use some recipes out of there. She donated all the procedures to the doctors research and he thanked her by letting her go! His loss most certainly. I am also searching for the Lighthouse cookbook. I know my she took it when mom passed away but she claims no. I have searched and searched. I use to make the peanut brittle from that book. It was the very best. Thank you for the recipes. My SIL Joyce grew up on a farm and she makes the best pickles even today! My mom did the tomatoes and apples. Thank you for sharing the stories and the recipes here. HUGS

    Years ago I made b&b pickles, easy and delicious. My parents always had a large garden and Mom canned tomatoes every summer. Old cookbooks are sweet treasures. Living in a small apartment,plus not baking/cooking like I used to, large appliances weren't needed..so for several years I've used a mini processor and hand mixer (both in pink!).
    This past week down here we've "hunkered down" in preparation for Dorian. And are so deeply thankful that it wasn't as bad as we'd feared. Lifting up our Canadian friends who are now battling the storm....

      So glad that you are safe after Hurricane Dorian passed through your area. My Dad had a huge vegetable garden and my Mom also canned tomatoes. Joe's Mom canned tomatoes too but we have not had them in some time as my MIL is no longer able to do it. So getting some from our Niece Renae was a real treat. Joe uses them in his chili!
