Easy 4 Cheese Lasagna, Soup and Snow!!

Me, Cooking???????

This year, I decided to blog at my own pace, not on a schedule and to keep it as real and as personal as I can.......

So here we go.......

I always say I HATE to cook but when it comes to having the kids over for meals, I truly do not mind cooking for them because they seem to eat like they never saw food before!!!!!

What I DO HATE is cooking on a daily basis for just Joe and I.......

Joe does bring home a lot of food from the Wegman's Ready to Serve Hot Cooked Food Bar on the days he works, which is usually until about 4:30 pm, so that works out perfect plus he gets employee coupons on a lot of those things.......
 They also sell a large, and I mean large, pizza for just $10!!!!!

Since I was so sick for New Year's, I had to cancel our New Year's Eve dinner which is usually Lobster made by Joe and shrimp, scallops and chicken fingers for our oldest son, Joey, as he does not care for fish of any kind!!

About 25 - 30 years ago, I started the tradition of making Lasagna for New Year's Day Dinner ......

Last Sunday , I made a double batch of my 4 Cheese Lasagna and we celebrated the New year with the kids.......
 Here is the recipe but remember, I do not pride myself at being a cook so I use Ragu Traditional sauce!!!

No, I do NOT make my own....no time or patience to do so!!

4 Cheese Easy Lasagna

1 box of Lasagna
1 large jar of Ragu Traditional Sauce or your own homemade sauce
1 lb. of ground Sausage
1 lb. of Hamburg
1 lb. of Ricotta Cheese or a bit more if you like it cheesy
1 package of Shredded Mozarella Cheese
1/4 cup of Parmesan Cheese
Sliced American Cheese broken up into small pieces or shredded if you can get it from the Deli- I use about 5-6 slices
2 eggs
To Taste- Onion Salt, Garlic Salt, Pepper, Parsley and Italian Seasoning

Brown the sausage and hamburg together, drain
Add sauce to meat mixture
Boil the lasagna noodles and drain
Mix together all cheeses and eggs and Seasonings, saving a small amount of Mozzarella cheese.

I use a tin foil lasagna pan so I can just throw it away afterward or you can use a baking dish

Spread a thin layer of the meat sauce on the bottom of the pan
Add a layer of lasagna noodles, I usually use at least 5 across to form a good base for the lasagna
Add some of the cheese mixture
Add some meat sauce to help spread the cheese mixture over the lasagna noodles and then start over again with another layer of lasagna noodles.
When you can layer no more, end with a top layer of noodles, spread the remaining sauce over the noodles, sprinkle the remainder of mozzarella cheese over the top along with some parmesan cheese and I usually break up more sliced American cheese and add that to the top.

Cover with tin foil and Bake in a 350 degree oven for about 1 hour.

I like to make it the day before because Lasagna always seems to taste better the following day!!!
If you like cheese and like a cheesy lasagna then I think you will enjoy this!!

You can serve it with a salad and I get fresh baked Italian bread from Wegman's......
 I make a double batch as I always send the kids home with Take Home containers!!!
 
With Snow coming tonight into tomorrow morning.......
And the possibility of 10 inches of Snow on the weekend......
I thought it was the perfect time to make Turkey Bone Broth Soup from the turkey breast that I had made for Christmas Day Dinner.......
My Dad taught me how to make this 40 years ago when I first got married and my sons and daughter-in-law love it!!!
We just add whatever noodles we like .......

My Dad made a pot of soup every week , even in the Summer.....

Why do I make such a huge pot of soup??????
Because I send home jars of soup and bags of noodles with my kids so they can enjoy it for a few days!!!!
 These noodles seem to be a favorite of ours for the soup......
 I like the texture and the size of the noodles.....
 Geez!!

I just realized that since I mentioned Wegman's so much, I better say that I am NOT getting any reimbursement from Wegman's for this post!!!!

Joe works there part time and that is where HE does the majority of our food shopping!!!

I have never done the Food shopping!!

He likes to do it so he does as did his Father before him!!

 I am off for the next few days but will be going back to work on Sunday night...

I hope the roads will be cleared by then.....

What have I been up to??????

Truth be told, I am still trying to take down Christmas....

After being so sick ( 2 weeks!) after Christmas , and working and my son and his wife, Jim and Danielle moving into a larger townhouse in the Apartment Complex where they live, I haven't had a lot of time.....

I am on curtain hanging duty for their new house, which is really nice.....

I hope to be able to share some photos of it soon and I hope to get my Living Room decorated for Valentine's Day as it has been returned to "Normal" whatever that might be......

So please bare with me, I hope to be back soon with a decor post........

And I hope you will be back to visit again soon.......

  1. YUM on both dishes! I haven't made a home lasagna in a long time. Marty not a fan of it but he will eat it. And I love soups of any kind and all year round too. Girl, I send home food with my kids every Sunday. They come every Sunday to eat dinner with me. I usually buy those cheap dollar tree store containers or the little alum. pans with lids. Works out great. I just froze some left over chili. Hugs and blessings, Cindy

  4. Oh, that lasagna looks so delicious and I love that when you cook, you like to share! Your hubby sounds like a sweetheart - doing all the shopping and stopping every night at that fabulous food bar! We don't have Wegman's out here, but I wish we did. My Mr. can hardly boil water and he's skinny, too, so I feel like I have to feed him regularly, and he has a long commute so I don't ask him to stop....anyway, I do have to cook, but luckily I do love my own cooking. (a little humor there). Hope you don't get slammed too hard by this storm. I'm sure it will look so beautiful, though. Stay safe. Hugs xo Karen

  5. I often make soup but rarely make lasagne, your recipe looks delicious especially with all that yummy cheese. Such a great idea to use foil containers that can be thrown away. The snow here didn't last long, it has disappeared already hopefully it will be the same for you. Stay safe.

    We are expecting a snow storm here also on the weekend. 30cm., about a foot of snow.

  7. Hey Debbie! My mouth just waters looking at those pans of lasagna! I love it,but haven't made it in a long time. One of our SS teachers had us all over for our Christmas get-together and they made lasagna...oh my...And there's nothing like home made soup, especially during cold winter months. What a nice treat for your children!

We had Lasagna also, but I bought a Stouffers brand, when we were first married I made a recipe my sister had made that my hubby liked, when I made it I asked my hubby if he liked it and he said it taste like spaghetti and I told him I will never make another one again, I will just make spaghetti it is much easier, and I have only bought Stouffer's every since.

  13. I'm with you, Debbie, I like to cook BIG and have leftovers to share or freeze. Would love to have that delicious looking double batch of lasagna right this minute! What a great idea to send people home with a jar of soup and bag of noodles!

  15. Don't be in too much of a hurry to take down Christmas. :) It's a nice thing to have stick around. Sorry you're sick, though. :( I lived in upstate NY for 5 years and am very familiar with Wegman's fresh bars. TOTALLY amazing and delicious stuff there.   17. We always do this with our turkey, too! Carl is Polish, so he takes care of all the soup stocks (LOL!). And, they're wonderful to have, getting us through the Winter months. We got about 8" of snow in North Central Ohio - we're West of Cleveland, and my son who is East of Cleveland got 12", what is fondly referred to here as the "Snow Belt". Hopefully you didn't get blasted! Stay warm, and I hope you're feeling better.
